Cast iron under ₹3,000, seasoned and abused
Six pans, four months of daily cooking, and one that lost its seasoning in a week. Surface finish is the whole story.

We test independently and earn a commission from some links on this page. How this works
Cast iron is simple metallurgy and complicated marketing. Every pan here is the same iron. What differs is how rough the cooking surface is when it leaves the factory.
Why surface finish decides everything
Seasoning is polymerised oil filling the texture of the metal. On a sand-cast pebbled surface that takes months of cooking. On a machined surface it takes a fortnight. Same pan, same oil, wildly different first impression.
What we did to them
Four months of daily use, including tomatoes, including a deliberate soak in the sink overnight, including a scour with salt. Two pans came through unmarked. One shed its coating within a week and needed stripping back to bare metal.
The honest conclusion
Buy on surface finish and weight. Ignore everything else on the box.
